Research in many countries has identified unsatisfied consumer needs which conventional wines do not address.
In particular, some consumer groups seek wines which can be drunk with more carefree enjoyment and thirst quenching pleasure and less anxiety about:
- Importance of socially responsible usage
- Alcohol and health concerns
- Unwanted intoxication risk
- Calorie and weight issues
BUT: Until now such wines have been impossible to make without prostituting basic wine integrity.

The Technical Problem
Changing the natural balance of a wine has always meant robbing it of its authenticity. Examples:
